Bacon, salami, Royal Beef: halal beef charcuterie

Beef holds a special place in halal charcuterie: it is the meat that brings back the most generous preparations, the ones usually associated with pork. Beef bacon

What sets it apart: a whole piece with a golden crust and marbled meat, sliced thinly. The marbling does the work: as it cooks, it gives slices full of flavour and character.

How to serve it: in the pan at breakfast, grilled in a burger, or in strips in a hot dish. It finds its place at every meal.

Beef salami

What sets it apart: a pink slice, marbled with white, cut into fine, even rounds. This is sharing charcuterie at its most obvious — the one you put in the middle of the table.

Royal Beef

What sets it apart: a cut of beef with a dark crust, marked by its netting, hiding pink, even meat. Sliced very thinly, it unfolds into wide, supple slices.

How to serve it: in a generous sandwich, with mild mustard and gherkins; on a cold plate, with a green salad and a few pickles; or in a burger, a few slices at a time.

Beef or turkey?

The two ranges do not compete, they complete each other. Turkey offers fine meat that lends itself to smoking and spice crusts — the territory of carpaccio, smoked fillet and roast fillet. Beef brings a more pronounced taste and holds up better to cooking. On a platter, the ideal is to let the two talk to each other: a few rounds of beef salami beside slices of turkey carpaccio, and no one gets bored.
